Ingredients:

  • Peppers
  • 1 or 2 tomatoes
  • Eggplants
  • 1 small onion
  • Garlic
  • Oil
  • Salt

Preparation:

  • Roast peppers and eggplants, clean them and cut them.
  • Option 1: Add roasted tomatoes, a chopped onion, salt and olive oil to the previous vegetables to obtain a salad.
  • Option 2: In a pan, preheat some oil, add tomatoes, garlic and salt. When tomatoes are ready add the roasted pepper and
  • cook everything until sauce reduces. Add the roasted eggplants few minutes before turning the heat off. Season it with olive oil, and you will obtain another type of salad that tastes differently (the picture).
